Holiday recipe: Kabocha Curry Soup

This is a wonderful recipe that we've been doing every year during the holiday season for the last years. Even the kids love it!
We use some curry powder that we brought back from our trip to India several years ago, but any curry should work. It is also very easy to make.


Here is what you need:

1 organic kabocha or any tasty winter squash
1 organic apple
1 organic onion
1 table spoon of organic oil
1 cube of organic vegetable bouillon (Rapunzel is our favorite)
2 tea spoon of curry, salt, pepper
crème fraiche or cream to taste
water
a pan
a blender

How to do it:

Peel the kabocha, the apple and the onion. Cut the squash and the apple in squares. Slice the onion. Heat the oil in a pan and fry the onion until light brown. Add the kabocha, the apple, some water, the bouillon cube and the curry. Simmer until tender. Make sure there is some water remaining at the bottom of the pan until the end.


Puree everything using the blender. Add cream, salt and pepper to taste.
